The 10th master of Nishihori family, "Genjiro" was living in the area nearby the Biwa Lake in Shiga Prefecture, and it was around then that he was taken away by the mineral waters flowing from Nikko mountains in Tochigi Prefecture and the rice paddy fields. After this, during the end of Edo era to the beginning of Meiji Restoration, he took in the sake brewery in 1872, the sake brewery that we work in today.
Our brewery is located in the southern parts of Koyama-shi, by the Nikko road (ex-Route 4). From the time when the brewery was established and we first started to make Japanese sake, this area has seen many historical changes, such as the Tokugawa government people walking by.
Even though many years has gone by, we still live by our principle of "Loving the nature, and always keep our handmade spirits alive in your hearts". Whilst keeping our traditional ways, we would want to keep the flexibility of taking in the modern 'ways' of making sake.
From this perspective, we renewed our sake brewery in 1995, adding on a shop. By having a direct connection with our customers, we can take in the new ideas surrounding sake, whilst keeping our tradition. This, we believe, creates a new mix of the old and the new, creating a Wakazakari way.
The meaning behind the name "Wakazakari" is, as you may recognize from the characters, is "For those who drink this, may there be youth". Another meaning is directed towards us, where we keep the idea of our constant efforts to create high quality sake, and also to be known as the "sake brewery that keeps its youth". We hope that you will enjoy our Wakazakari!
