When hearing the word "sake", you may think of Niigata.
But why is Niigata Prefecture so famous with sake?
Well first of all, it is the perfect environment. Here at Nagaoka-shi, where our brewery stands, the daylight is very short during the winter, meaning that there is no big temperature difference between day and night. Every year, we are met with snow, and this gives us the perfect weather and environment for a good sake brewing experience.
Secondly, it is the water. The water flowing in from the East Nagaoka mountains are all fresh with low calcium. With this, it gives us the chance to create sake with clarity, and with a crisp taste. The reason why the Daiginjo sake we make during the cold winter has a beautiful scent and an easy-to-drink flavor is because we use the cold, fresh melted snow water from the mountains.
Lastly, the most important element of all, is the people.
At our brewery, most of the processes are done by the hands of the workers. We try not to depend on machines,and rather use the techniques and experience of the brewers. By doing so, we aim to make sake that brings out the rice flavor. Carefully rinsing the rice that is vulnerable after being polished with our hands, using a large thick pot to steam, preparing in a small tank, and only produce within the limits where we can oversee everything. With these in our minds, we brew sake every year.
