The Akita-style preparation of ingredients for sake brewing begins with the arrival of winter, with the most ideal conditions reached in the coldest temperatures. During the period of freezing snowfall, the snow purifies the air and completely covers the conditions of sake brewing, leading to a consistent preservation of the most ideal room temperature for the production of sake and thereby an exceedingly delicious product.
■ Akita-style long-term low-temperature fermentation
Azakura Shuzo is a sake brewery full of tradition, founded in 1886 in an area of Yokote City in Akita Prefecture famous for its igloo-esque snow huts called kamakura. The symbol of Yokote City, Yokote Castle, is also known as "Azakura Castle."
Under the leadership of Akita's Toshio Terai, known as one of the five great chief sake brewers of the nation, and through the passion and enthusiasm of our brewery workers, we undertake the sophistication of technique harnessed by the winter Akita-style long-term low-temperature fermentation process to produce our alcohol.
Sake that is produced only from the local rice of the rice-producing region that is Akita, boasting both a showy fragrance and a mellow flavor that work in harmony, and harnessing a truly satisfying taste that one just cannot get enough of, is the distinctive sake of Azakura Brewery.
