◼︎ Choosing the right rice
Here at Ohya Chuukichi headquarters, we have a particular taste in what rice we use.
The meaning of local sake is to use the rice, water and people of the area. That is why we believe that we can make a sKe that is special, showing the local characteristics. With our close relationship with the rice field owners, we are able to use their rice. And from time to time, we use our own field to make rice, and keeping a keen eye on good quality.
To have a safe sake, as well as high quality, we do not compromise our view towards the involvement of the locals.

◼︎ Choosing the right water
The biggest element in brewing sake is the "water".
Even if you use high quality rice with a state of the art technology, it does not necessarily mean it would be good sake if you do not use the right water.
The beautiful, clear water that comes from this nature filled area of Shirakawa.
Our well that we have been using ever since our establishment is the pure underground water coming down from the Nasu Mountains. It is a water with low calcium content, with lots of minerals. There are no additives such as iron or manganese.
By using only this water, we are able to provide a nice, mild sake that just slides right into you.

The one thing that we put great focus on to get compliments from customers about our sake; that is the people we work with.
It is a funny thing, but with people's passion and hope poured into the sake brewing process, it seems that the sake tastes even better.
