Hakone Yama has been making The perfect, high quality Japanese sake by using the cool air and the stream water for, Hakone, and using a special rice.
Hakone Yama is made under the belief that "Japanese sake is born from the rice. Not until you can taste the rice, can you call it Japanese sake.
The main ingredient for making Japanese sake is rice. The process of do stilling process comes from using the rice' starch and its distinct sweetness, which is then fermented. In many common Japanese sake, the sweetness is driven from the amino acid, but apart from this, there is this distinct, mild, sweet taste of rice when you eat it. This is the same with Japanese sake, the sweetness comes out from the rice's starch. This soft sweet taste is what brings this mild flavor. The main concept of Hakone Yama is to create a sake that brings a sense of nostalgia, and comfort to people.
