【Hachitsuru Factory】
Hachitsuri first opened its doors at the end of the Edo era, in 1786, back when Tokugawa Ienari was Shogun.
Originally, Hashimoto Hchiuemon, the first of the family, was making his living through a tailoring business. When he bought the alcohol store and started to brew sake at the same time, it did not go as well as he hoped for. It was not until the 6th generation Hashimoto, Hashimoto Hachiuemon Terumichi took over, and business was now on the right tracks. It was in the Taisho era, and the Hashimoto family invited Kamajiro Eda from the Ministry of Treasury.He was talented in lecturing techniques, and with this knowledge being passed on, the fermentation techniques greatly improved at the Hashimoto brewery, leading to successful sake products. These techniques and the traditions of the Hashimoto family have been passed on through generations, up to today.
The Hachitsuru logo that is being used today is designed by Taikan Yokoyama, a talented Japanese artist back in the day, and it is told that he was 'paid' with a large barrel of pure sake from the brewery.
The Hachitsuru Factory is now running on its 8th generation. It is also said to be the brewery that brought the highest level of yeast into the industry.
