We engage in sake brewing that is uniquely characteristic of Iwate Prefecture
In 1956, 2 sake breweries that had been active since the 1910s merged, and in Maesawa Town of Isawa County, our company, Iwate Meijou, was born.
Henceforth, with 岩手誉 as our representative product, we have been producing numerous famous sake lines including 大桜 and 陸奥, and moreover, we have been using the rice of neighboring cities, towns, and villages while collaborating in local sake brewing in places such as Fujiwara, Kisawa, and Kanagasaki.
Currently, we as much as possible promote sake brewing that uses homegrown rice. We signed a contract with farmers and cultivated together what is said to be a dream brewer’s rice called “The Turtle’s Tail” in Kanegasaki Town, and “Miyama Nishiki” in Maezawa Town, and we are concentrating our efforts on extremely fastidious sake brewing. Thanks to the cooperation of many, we have received countless first-place awards for excellence in our sake brewing, and in 1997 we actually received every single possible first-place award for excellence in new sake brewing within not only Iwate Prefecture but the entire Tohoku region and in fact the entire country. Then in 2000 for our “Dream Blizzard” line we received a first place national award.
■ The taste we continue to protect, and the brewing skills we continue to inherit
■ Steaming the rice
We place the rice that has absorbed the water inside a large steaming kettle called a “koshiki”
■ Cooling
We then allow the steamed rice to cool
■ Malted rice
■ Yeast mash
■ Main fermenting mash “moromi”
