Toyo no Ume Junmai Ginjo Gin no Yume Jikomi
Kochi prefecture's first sake brewing rice "Gin no Yume" was born in 1998, upon 10 years of preparation. "Gin no Yume" has as its mother Yamada Nishiki and as its father the short Hinohikari (a hanmai), and therefore inherits the former's suitability to sake brewing and the latter's sturdiness, while undergoing improvements so that it is easy to produce even in Kochi's climate. "Gin no Yume Jikomi" 100% uses Gin no Yume, and is a gentle sake wrapped in a gorgeous and elegant aroma. It also goes well with food, and is very suited to meals of celebration. This fine item is imbued with the dreams of Tosa-esque ginjo sake. It is recommended for those who are selecting "Toyo no Ume" sake for the first time. This sake won the Gold Prize at the first "London Sake Challenge," a sake contest held in London in 2012. ■ Acidity 1.6
