The origins of the name "Taikan" is derived from the crown that is handed over to the military officer in the times of celebrating one's prospects. Taikan, a sake named to fit celebratory situations.
The brewery was first established back in 1877, carrying a history of more than 120 years. The brewery is located in the southern Alps, and us run by the chief brewer Yoshimitsu Kikuchi, who was only 32 years old when he first got this position. In a clean, nature filled environment, the golden prize winning Taikan Daiginjo is brewed.
The flexibility, sensitivity, docile techniques, and teamwork that comes with youth creates a distinct, yet special sake. The teachings from Shingen Takeda, a great historical being that led people to create a peaceful nation is still very much alive at this brewery.
